On Sunday April 10, Cochon 555 will stop in Seattle at the Fairmont Olympic Hotel during their extensive US tour. The Cochon event series, which started in 2008, raises awareness of family farming, culinary excellence and ethics in regards to meat consumption. During the event, five local chefs will prepare six dishes from one whole hog, to be voted on by the event crowd and judges. This year’s competing chefs include Paul Shewchuk of Fairmont Olympic, Josh Henderson of Vestal, Bobby Palmquist of The Walrus and the Carpenter, Brendan McGill of Hitchcock and Tyler Palagi and Charlie Garrison of Radiator Whiskey. Guests will enjoy their meals with wine, cocktails and small bites.
Other available activities include a Luxe Butter Bar with Antica Napa Valley, an Artisan Cheese Bar featuring Cypress Grove Chèvre, Coach Farm, Parrano and 34˚ Crisps, a chef-prepared bite from California Olive Ranch, the Seafood Shelf featuring Elliot’s Oyster House and Rappahannock River Oysters and a reserve tasting of Prosciutto di Parma.
